Cheesy Mashed Cauliflower 

Ingredients:

1 med/ large head of cauliflower chopped up small
5 oz Cream Cheese
1/4 cup light cream
1/2 tsp Salt
1 1/2 tsp minced garlic 3/4 cup shredded Monterrey Jack cheese
2 and 1/2 Tbs Parmesan Cheese
1 tsp Paprika
Non stick spray ( I used Olive oil spray)

Directions:
Pre heat oven to 350°
Chop Cauliflower and add to a boiling pot of hot water and boil for 10- 12 minutes.
Drain cauliflower well. ( while draining in colander.. I push out any excess water out with paper towels.)
Meanwhile in a bowl combine the cream cheese, light cream, salt, garlic and Parmesan cheese and using hand mixer mix until blended... add cooked cauliflower and mash together with mixture. I then use hand mixed to mix ..leaving some small chunks and place into greased baking dish, top with cheese sprinkle with paprika and bake for 30 minutes or until cheese starts to lightly brown.

Radish Chips

Ingredients:

10 or more large Radishes ( I used 12 large for 4 servings)
Salt and pepper
Olive oil cooking spray

Directions:

Pre heat oven to 375 °
Slice radish thin.
Line baking sheet with foil and spray with cooking spray.
Arrange radishes in a single layer and lightly coat with a dusting of cooking spray and add salt and pepper to your liking.
Bake for 15 minutes and turn over and bake for another 15. Let cool.

Fiesta Lime Chicken
(low carb if you skip the tortilla strips)

Marinade:
2 tbsp. minced fresh cilantro
1 minced clove of garlic
3 1/2 Tbsp. lime juice (fresh)
2 Tbsp. olive oil
4 chicken breasts
combine marinade ingredients,put into a ziploc bag add chicken. Seal and chill 5 hours or overnight.

Mexi-Ranch Sauce:
1/4 cup mayo
1/4 cup sour cream
1 Tbsp. milk
2 minced fresh jalapeno
1 Tbsp. minced fresh onion
1/4 tsp. dried parsley
1/8 tsp.salt
1/8 tsp. dried dill weed
1/2 tsp. paprika
dash of ground pepper
1 Tbsp crushed chili flakes
2 tbsp. spicy seasoning ( Chipotle is what I used )
1 tsp. vinegar
Mix all sauce ingredients until smooth,cover and chill until needed.
when you're ready to prepare the chicken,preheat grill and cook chicken 3-5 minutes per side or until done .
arrange grilled chicken in baking pan. spread a layer of mexi-sauce dressing over each piece followed by shredded cheese.
bake chicken for about 10-15 minutes and broil for 2-3 min.
spread a bed of fried tortilla strips on each plate. top with chicken breast and serve with rice and pico-de-gallo or salsa.
* for low carb skip tortilla strips and serve with salad .

How to Boil an Egg without the gray ring

Now the directions -

1) Grab your eggs (I’m using large eggs), and a pot. Pretty easy start, right?

2) Put the eggs in the pot and cover them with water, only about an inch overhead.

3) Put them on the stove and turn it on medium high heat.

Now this is where you NEED to pay attention.

4) As SOON as that water starts to boil (and I mean boil, not just a few bubble here and there), turn the stove off.

5) Set the timer for 10 minutes.

6) When the timer goes off, remove the eggs from the pot and put them in cold water. (Sometimes I put them in an ice bath, but I haven’t found that it really matters either way)

7) Let them sit for about 5 minutes and then dig in.

Of course, if you don’t want them right away, just store them in the fridge, but try to use them within a few days as they go bad faster than uncooked eggs.

Caribbean Mahi Mahi
1 lb. Mahi Mahi (or other thicker white fish like Cod)
2 tablespoons lime juice
Sea salt

1)Rinse and pat dry fish. Place in flat casserole dish.
2)Pour lime over fish and turn over to coat. Let marinate in refrigerator for 30 minute minimum
3)Take out of marinade, salt and grill. Approximately 4-5 minute each side depending on thickness.

Mango Salsa:
½ red bell pepper chopped
1 ripe mango chopped in same size pieces as pepper
¼ cup cilantro chopped
Avocado (optional)
Squeeze of lime
1 Tablespoon olive oil
1/2 garlic clove minced
Sea salt

Put all ingredients in bowl.

Cilantro Lime Cauliflower Rice:
1 head cauliflower
½ cup cilantro chopped fine
1 teaspoon lime juice
½ teaspoon granulated garlic
Sea salt to taste.

Preheat oven to 425.
1)Remove core of cauliflower then break into pieces.
2)Place in food processor until it resembles rice
3)Place cauliflower on a baking sheet and place in oven for 15 minutes.
4)Add cilantro, lime, garlic and salt.

The weight carried into adulthood. I was blessed with 2 beautiful little girls in 2006 and 2009 but had c-sections with both, as I was high risk and preeclamptic both pregnancies. I could not be nearly as active as I wanted to be in the early postpartum days. I was able to drop more weight after having my 2nd daughter due to breastfeeding on demand. When my 2nd daughter Lilly was about 3 months old, I had an acute gallstone attack that put me on an operating table within hours. After having my gallbladder removed, I put on MORE weight..There went my self esteem even more!

In November of 2012, I began having terrible pain in my lower back. After days of misery, my fiance finally dragged me to the hospital. The doctor was a bit concerned, but did not think I had anything seriously wrong. At best, he assumed kidney stones, and ran a CT. I will never forget the way that he came into my room, apologizing, and giving me the scariest news of my life. In my right ovary, there was a rare tumor, called a Teratoma. It was bigger than a golfball, and INSIDE of my ovary vs ON it. (This is rare for teratoma's.) The weight gain that I underwent the moment I grew into a little woman, now made more sense.
