Cheesy Mashed Cauliflower
Ingredients:
1 med/ large head of cauliflower chopped up small
5 oz Cream Cheese
1/4 cup light cream
1/2 tsp Salt
1 1/2 tsp minced garlic 3/4 cup shredded Monterrey Jack cheese
2 and 1/2 Tbs Parmesan Cheese
1 tsp Paprika
Non stick spray ( I used Olive oil spray)
Directions:
Pre heat oven to 350°
Chop Cauliflower and add to a boiling pot of hot water and boil for 10- 12 minutes.
Drain cauliflower well. ( while draining in colander.. I push out any excess water out with paper towels.)
Meanwhile in a bowl combine the cream cheese, light cream, salt, garlic and Parmesan cheese and using hand mixer mix until blended... add cooked cauliflower and mash together with mixture. I then use hand mixed to mix ..leaving some small chunks and place into greased baking dish, top with cheese sprinkle with paprika and bake for 30 minutes or until cheese starts to lightly brown.

Radish Chips
Ingredients:
10 or more large Radishes ( I used 12 large for 4 servings)
Salt and pepper
Olive oil cooking spray
Directions:
Pre heat oven to 375 °
Slice radish thin.
Line baking sheet with foil and spray with cooking spray.
Arrange radishes in a single layer and lightly coat with a dusting of cooking spray and add salt and pepper to your liking.
Bake for 15 minutes and turn over and bake for another 15. Let cool.

Fiesta Lime Chicken
(low carb if you skip the tortilla strips)
Marinade:
2 tbsp. minced fresh cilantro
1 minced clove of garlic
3 1/2 Tbsp. lime juice (fresh)
2 Tbsp. olive oil
4 chicken breasts
combine marinade ingredients,put into a ziploc bag add chicken. Seal and chill 5 hours or overnight.
Mexi-Ranch Sauce:
1/4 cup mayo
1/4 cup sour cream
1 Tbsp. milk
2 minced fresh jalapeno
1 Tbsp. minced fresh onion
1/4 tsp. dried parsley
1/8 tsp.salt
1/8 tsp. dried dill weed
1/2 tsp. paprika
dash of ground pepper
1 Tbsp crushed chili flakes
2 tbsp. spicy seasoning ( Chipotle is what I used )
1 tsp. vinegar
Mix all sauce ingredients until smooth,cover and chill until needed.
when you're ready to prepare the chicken,preheat grill and cook chicken 3-5 minutes per side or until done .
arrange grilled chicken in baking pan. spread a layer of mexi-sauce dressing over each piece followed by shredded cheese.
bake chicken for about 10-15 minutes and broil for 2-3 min.
spread a bed of fried tortilla strips on each plate. top with chicken breast and serve with rice and pico-de-gallo or salsa.

How to Boil an Egg without the gray ring
Now the directions -
1) Grab your eggs (I’m using large eggs), and a pot. Pretty easy start, right?
2) Put the eggs in the pot and cover them with water, only about an inch overhead.
3) Put them on the stove and turn it on medium high heat.
Now this is where you NEED to pay attention.
4) As SOON as that water starts to boil (and I mean boil, not just a few bubble here and there), turn the stove off.
5) Set the timer for 10 minutes.
6) When the timer goes off, remove the eggs from the pot and put them in cold water. (Sometimes I put them in an ice bath, but I haven’t found that it really matters either way)
7) Let them sit for about 5 minutes and then dig in.
Of course, if you don’t want them right away, just store them in the fridge, but try to use them within a few days as they go bad faster than uncooked eggs.

Caribbean Mahi Mahi
1 lb. Mahi Mahi (or other thicker white fish like Cod)
2 tablespoons lime juice
Sea salt
1)Rinse and pat dry fish. Place in flat casserole dish.
2)Pour lime over fish and turn over to coat. Let marinate in refrigerator for 30 minute minimum
3)Take out of marinade, salt and grill. Approximately 4-5 minute each side depending on thickness.
Mango Salsa:
½ red bell pepper chopped
1 ripe mango chopped in same size pieces as pepper
¼ cup cilantro chopped
Avocado (optional)
Squeeze of lime

2 tbsp. spicy seasoning ( Chipotle is what I used )
1 tsp. vinegar
Mix all sauce ingredients until smooth,cover and chill until needed.
when you're ready to prepare the chicken,preheat grill and cook chicken 3-5 minutes per side or until done .
arrange grilled chicken in baking pan. spread a layer of mexi-sauce dressing over each piece followed by shredded cheese.
bake chicken for about 10-15 minutes and broil for 2-3 min.
spread a bed of fried tortilla strips on each plate. top with chicken breast and serve with rice and pico-de-gallo or salsa.
* for low carb skip tortilla strips and serve with salad .

Fiesta Lime Chicken
(low carb if you skip the tortilla strips)
Marinade:
2 tbsp. minced fresh cilantro
1 minced clove of garlic
3 1/2 Tbsp. lime juice (fresh)
2 Tbsp. olive oil
4 chicken breasts
combine marinade ingredients,put into a ziploc bag add chicken. Seal and chill 5 hours or overnight.
Mexi-Ranch Sauce:
1/4 cup mayo
1/4 cup sour cream
1 Tbsp. milk
2 minced fresh jalapeno
1 Tbsp. minced fresh onion
1/4 tsp. dried parsley
1/8 tsp.salt

Must try this one!!
Ingredients:
1 can Bacardi Strawberry Daiquiri Mixer
1 can Bacardi Pina Colada Mixer
Malibu Rum

Directions:

Buffalo Cauliflower Bites
Love Buffalo Wings but don't love the calories??? Well give these yummy bites a try!!! Tender baked cauliflower, covered in a sweet crisp coating that's been tossed in a hot buttery buffalo sauce will pair really well with crunchy celery and a cool ranch dressing. Healthier than the original but just as satisfying!
Ingredients:
1 cup of flour
1 1/4 cup of coconut milk
1 Tbsp of garlic
1 tsp of cajun seasoning
1 dash of sea salt
1 cup of Louisana wing sauce
1/2 stick of butter
Directions:
Preheat the oven to 450°F. Lightly spray a large non-stick baking sheet with oil.
Combine the coconut milk, flour, and garlic powder, cajun seasoning, and salt in a bowl and stir until well combined.
Coat the cauliflower pieces with the flour mixture and place on the baking sheet; bake for 30 minutes flipping at 15 minutes.
While the cauliflower is baking, combine the hot sauce and butter in a small bowl and heat/melt in the microwave.
After baked toss the cauliflower in hot sauce mixture, return to baking sheet and return to oven to continue baking for an additional 5 minutes.
Serve with ranch dressing and celery sticks.

Bacon/Sweet Potato Dog Treats

5 Tbsp. fresh bacon fat (see note below)
1/2 c. sweet potato, mashed well
4 c. flour
1 c. low sodium broth
1 egg, beaten
Preheat oven to 350°. Lightly coat baking pan with cooking spray.
In large bowl, combine bacon fat, egg, and sweet potato. When thoroughly combined, add broth and mix well again. Don't worry if bacon fat gets solid and hard to mix. That will happen later when you add the flour.
Slowly add flour and mix well in between. Once you get to a thick mixture, you can take your hands and squish it to blend well, too. This helps to make sure the bacon fats are blended well and not in clumps throughout the dough. (Be sure to remove any rings first)
Lay out onto floured board or counter. Roll out to desired thickness. Don't get too thin or they will be easy burned and extra crispy. Cut into desired shapes or use a pizza cutter and make squares.
Place onto baking pan, making sure not to touch each other. Bake 35 minutes or until golden on the bottom. They may seem slightly soft when touched. However, they do crisp up after they cool.
Keep in freezer for longer lasting treats. You can keep in refrigerator for up to 2 wks. Do not leave out of coldness. They have no preservatives and will mildew and rot in just hours, depending on how warm your home is.
NOTE: When you fry up bacon, save the fat in a container and keep frozen. Then when you need to make your dog treats, take out and thaw. You only want to freeze it in 5 Tbsp. measurements though. Otherwise you will lose it when you thaw.

1 pack low calorie hot cocoa mix (I used Nestle Fat free, it's only 20 calories)
1 3/4 cups Moist Devil's Food Cake Mix
1/2 cup liquid egg substitute
1 tsp fat free or almond milk
1/4 cup jet-puffed marshmallow creme
3 fun sized butterfingers crushed
Heat oven to 350.
Mix hot cocoa with 1/4 cup hot water until dissolved. In a bowl combine the cocoa, 2/4 cup hot water, cake mix and egg substitute. Mix together well. Line 12 muffin cups and pour batter into it until 2/3 of the way full. Bake in oven for 16-18 minutes until done. While cupcakes are baking mix marshmallow creme and milk together. when cupcakes are done and thoroughly cooled, then drizzle the marshmallow mixture over the cupcakes. Top with the crushed butterfingers.
Makes 12 cupcakes approx 127 calories, 2.5 g of fat and 3 WWP+

Gluten Free Bread

Ingredients – have them all at room temperature
3 cups sifted Domata Recipe Ready Flour ** SEE BELOW
½-cup nonfat dry milk powder (I didn't have this so substituted regular milk and took off 1/2 cup water from below)
¾-tsp salt
1 ½-tsp baking powder
¾ tsp unflavored gelatin
2 TBS sugar
3 ½-tsp instant yeast
3 eggs, beaten
¾-tsp vinegar
1/8 -cup vegetable oil
1 ¼-cup + 1/8 cup lukewarm water
Directions:
Preheat oven to 400 degrees, Grease a 5” x 9” loaf pan, and dust with DLF. (I used 360 because I have dark metal bread pans)
Mix all the dry ingredients in your mixing bowl first for several minutes while preparing the wet ingredients. Whisk together the wet ingredients and the yeast then add them to the dry and mix those together until mixed for ONLY 1 minute DO NOT OVER MIX. The batter should be slightly thicker than the consistency of cake batter. Add water a tablespoon at a time, as needed, to achieve this texture. Spoon the batter into the prepared pan, smooth with wet fingers, cover and let rise in a warm place until dough reaches top of the pan. Bake for 10 minutes then cover lightly with foil, and bake for another 35-40 minutes depending on your oven. Remove from pan immediately to cool. Cool before slicing. Store tightly covered on the counter for 3 days, in freezer for several weeks. (It will dry out in the refrigerator).
This recipe also makes beautiful dinner rolls.
Take a 1/3 cup greased scoop or equal measured amount of batter and place into large greased muffin pans. Bake at the same temperature as the bread, but for only 20 minutes or until nicely browned.
We also cover our rolls with a tin foil tent to insure not over browning.
As a special treat add chunky applesauce or apple sauce that has chunky peaches.
** I found this great flour at Country Mart in Branson -- It's only around $12 for a 4 lb bag and it includes the xanthan gum. That seems expensive but if you've bought gluten free products, this is cheap)

Ingredients – have them all at room temperature
3 cups sifted Domata Recipe Ready Flour ** SEE BELOW
½-cup nonfat dry milk powder (I didn't have this so substituted regular milk and took off 1/2 cup water from below)
¾-tsp salt
1 ½-tsp baking powder
¾ tsp unflavored gelatin
2 TBS sugar
3 ½-tsp instant yeast
3 eggs, beaten
¾-tsp vinegar
1/8 -cup vegetable oil
1 ¼-cup + 1/8 cup lukewarm water
Directions:
Preheat oven to 400 degrees, Grease a 5” x 9” loaf pan, and dust with DLF. (I used 360 because I have dark metal bread pans)

25 HOUSEHOLD TIPS
1. Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster.
2. Store your opened chunks of cheese in aluminum foil. It will stay fresh much longer and not mold!
3. Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking.
4. Add a teaspoon of water when frying ground beef. It will help pull the grease away from the meat while cooking.
5. To really make scrambled eggs or omelets rich add a couple of spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them up.
6. For a cool brownie treat, make brownies as directed. Melt Andes mints in double broiler and pour over warm brownies. Let set for a wonderful minty frosting.
7. Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if your want a stronger taste of garlic.
8. Leftover snickers bars from Halloween make a delicious dessert. Simply chop them up with the food chopper. Peel, core and slice a few apples. Place them in a baking dish and sprinkle the chopped candy bars over the apples. Bake at 350 for 15 minutes!!! Serve alone or with vanilla ice cream. Yummm!

Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza. I saw this on the cooking channel and it really works.
10. Easy Deviled Eggs
Put cooked egg yolks in a zip lock bag. Seal, mash till they are all broken up. Add remainder of ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg. Just throw bag away when done easy clean up.
11. Expanding Frosting
When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar and calories per serving.
12. Reheating refrigerated bread
To warm biscuits, pancakes, or muffins that were refrigerated, place them in a microwave with a cup of water. The increased moisture will keep the food moist and help it reheat faster.
13. Newspaper weeds away
Start putting in your plants, work the nutrients in your soil. Wet newspapers, put layers around the plants overlapping as you go. Cover with mulch and forget about weeds. Weeds will get through some gardening plastic they will not get through wet newspapers.
14. Broken Glass
Use a wet cotton ball or Q-tip to pick up the small shards of glass you can't see easily.
15. No More Mosquitoes
Place a dryer sheet in your pocket. It will keep the mosquitoes away.
16. Squirrel Away!
To keep squirrels from eating your plants, sprinkle your plants with cayenne pepper. The cayenne pepper doesn't hurt the plant and the squirrels won't come near it.
17. Flexible vacuum
To get something out of a heat register or under the fridge add an empty paper towel roll or empty gift wrap roll to your vacuum. It can be bent or flattened to get in narrow openings.
18. Reducing Static Cling
Pin a small safety pin to the seam of your slip and you will not have a clingy skirt or dress. Same thing works with slacks that cling when wearing panty hose. Place pin in seam of slacks and ... guess what! ... static is gone.
19. Measuring Cups
Before you pour sticky substances into a measuring cup, fill with hot water. Dump out the hot water, but don't dry cup. Next, add your ingredient, such as peanut butter, and watch how easily it comes right out. (Or spray the measuring cup or spoon with Pam before using)
20. Foggy Windshield?
Hate foggy windshields? Buy a chalkboard eraser and keep it in the glove box of your car When the windows fog, rub with the eraser! Works better than a cloth!
21. Re-opening envelopes
If you seal an envelope and then realize you forgot to include something inside, just place your sealed envelope in the freezer for an hour or two. Viola! It unseals easily.
22. Conditioner
Use your hair conditioner to shave your legs. It's cheaper than shaving cream and leaves your legs really smooth. It's also a great way to use up the conditioner you bought but didn't like when you tried it in your hair.
23. Goodbye Fruit Flies
To get rid of pesky fruit flies, take a small glass, fill it 1/2' with Apple Cider Vinegar and 2 drops of dish washing liquid; mix well. You will find those flies drawn to the cup and gone forever!
24. Get Rid of Ants
Put small piles of cornmeal where you see ants. They eat it, take it 'home,' can't digest it so it kills them. It may take a week or so, especially if it rains, but it works and you don't have the worry about pets or small children being harmed!
25. Dryer Filter
Even if you are very diligent about cleaning the lint filter in your dryer it still may be causing you a problem. If you use dryer sheets a waxy build up could be accumulating on the filter causing your dryer to over heat. The solution to this is to clean your filter with with a toothbrush and hot soapy water every 6 months.
