10 things to check on the nutrition label.

1. First thing to check should be the serving size. A lot of people go straight to calories but that’s not any good if your serving is a teaspoon.

2. Now that you know how big the portion is, check if the calories are relevant.

3. If you’re on a diet, this is what you’re targeting. Check how much fat you’re putting into your body. Anything more than 5 should be avoided if you’re looking to lose weight.

4. Trans fat are the enemy of any body, diet or not. These fats do not get burned off. They stay stored and accumulate, eventually blocking your arteries. You can find many food items with 0 grams but you’ll occasionally have to settle to 0.1 or 0.2. Anything higher than that should be left on the shelf.

5. Sodium is your salt intake. Salt will retain your water instead of letting it flush out of your system. The lower the number, the better.

6. Carbs are the first to burn up. If you’re looking to trim down, you’ll want to keep that number low so you can target burning your fat.

7. Fiber is good to flush your system but it’s easy to overdo your intake since it’s found in so many different foods. Don’t put all your fiber in the same meal.

8. Any diet knows that sugar doesn't help losing weight. Keep that number low.

9. Protein is the second thing to be burned up. However, it’s important to keep protein coming into your body with every meal. Just don’t overdue your daily value.

10. It’s good to keep an eye on how many calories are considered in calculating the daily values. Someone on a diet will obviously not be consuming 2000 calories, so keep a calculator close to do the math depending on your calorie intake on your personal diet.

Ricotta Stuffed Mushrooms & Tomatoes



Ricotta-Stuffed Tomatoes and Mushrooms
INGREDIENTS:
1 cup part skim Ricotta Cheese
1/2 tsp -1 tsp basil (use your taste preference)
A couple dashes of salt and pepper
Tomatoes
Large Mushrooms with stems removed
About 1 tbsp olive oil
chopped parsley and snipped chives (optional)
INSTRUCTIONS:
Mix ricotta cheese with basil, salt, and black pepper.
Wash mushrooms and remove stems.
Cut the tops off of tomatoes and scoop out the seeds; fill the cavities with the ricotta mixture.
Arrange the stuffed tomatoes and stuffed mushrooms in a baking dish, drizzle with olive oil, and bake in a 400-degree oven until heated through.
Sprinkle with more snipped chives or finely chopped parsley before serving. These would be great to make ahead of time for a party, refrigerate until ready, then heat and serve.

Gluten free Peanut Butter Chocolate Chip Mini Muffins

Gluten free Peanut Butter Chocolate Chip Mini Muffins 
Makes 34 mini muffins

INGREDIENTS:

1 cup peanut butter
2 medium ripe bananas
2 large eggs
7 tablespoons honey (agave syrup may be substituted)
1 1/2 tablespoon vanilla extract
1/2 teaspoon baking soda
1/4 tsp salt
1 cup mini semi-sweet chocolate chips

DIRECTIONS:

Preheat oven to 400F. Prepare mini muffin pans by spraying very well with cooking spray,set aside.
Place the first 7 ingredients into blender, and blend on high speed until creamy and smooth.
Stir in chocolate chips by hand.
Using a tablespoon drop 1 tablespoon into each cavity 3/4 full.
Bake for 8 to 9 minutes, or until the tops are set, springy to the touch, and a toothpick comes out clean. Allow muffins to cool in pans for about 10 minutes, or until they are firm enough to handle.
These are amazing fresh,, but will keep airtight at room temperature for 5 days, or in the freezer for 4 months.

These are so super yummy!!! You would never guess there was no flour in here!!! They were bouncy and soft!!



Chicken Tortilla Soup

Chicken Tortilla Soup

Even though this may look like a lot of ingredients, the prep time is less than 15 min. Total cook time is 30 minutes.

Ingredients
1 small white onion chopped
3 green onions chopped and separated...whites add to white onion, greens save for garnish
2 fat garlic cloves minced
1 cup cilantro
1 can black beans
1 cup frozen (non gmo) corn
1 can fire roasted diced tomatoes
2 teaspoon cumin
1 1/2 tablespoon chili powder
2 tablespoons lime juice
2 tablespoons oil for sautéing (I used coconut)
1/2 teaspoon sea salt pepper to taste
2 boxes low sodium chicken broth or 64 oz.
3 boneless, skinless chicken breasts
1 red bell pepper chopped
2 cups tortilla strips or chips
cheddar cheese, sour cream, hot sauce or cayenne for garnish

1) Heat oil in med/high pan
2)Add onion and peppers sauté for 5 minutes until soft
3) Add garlic sauté 1 minute longer stirring
4) add cumin, chili powder, s & p, beans, corn and tomato...stir
5) add chicken broth and lime juice... bring to a low simmer for 10 minutes
6) taste and add more cumin, chili powder, lime and or salt and pepper to your liking
7)add chicken breast and cook for 15 more minutes
8)remove chicken breast to a plate, allow to cool for handling
9)with a fork, shred chicken and add back to soup
10)ladle soup into bowls , stir in a tablespoon or two each of cilantro and green onion, chips and garnish on top with cheddar cheese, sour cream and hot sauce to your liking

What You'll Need
2 cans Cream of Mushroom soup
1/2 cup low fat mayonnaise
3/4 cup shredded Cheddar cheese
1/4 teaspoon ground black pepper
1/2 tsp garlic powder
1 bag (750g) frozen mixed vegetables
2 cups cooked chopped chicken
1 package refrigerated biscuits (10 biscuits)

How to Make It
Heat the oven to 400°F. Stir the soup, mayo, cheese, black pepper, and garlic powder in a large bowl. Add the vegetables and chicken. Pour mixture into a 9x13 baking dish. Bake for 15 - 20 minutes or until the chicken mixture is hot and bubbling. Top the chicken mixture with the biscuits. Bake for 15 minutes or until the biscuits are golden brown.

Corn & Broccoli Casserole with Bacon

Corn & Broccoli Casserole with Bacon 

2/3 cup almond flour
1/2 cup cornmeal
3 Tablespoons granulated Swerve or Stevia
1 Tablespoon Baking Powder
pinch of sea salt
1/3 cup almond milk
1 can whole kernel corn, drained
1 can creamed corn
1 cup light sour cream
1/2 cup unsalted butter, melted
1 bag of frozen broccoli
1/2 package bacon, diced and cooked to crisp
1 cup grated cheese - whatever kind you like

Combine flour, cornmeal, sweetener, salt and baking powder in a small bowl.

Preheat oven to 350 degrees F. Grease a baking dish (I used a 13" x 9").

Melt the butter over low heat; dice up and cook bacon to crispy, drain grease and then allow to cool on paper towel. Lightly steam the broccoli, drain and then dump into the baking dish - spread it evenly out.

Open the cans of corn and pour into a medium sized bowl. Add into this the melted butter, sour cream and milk. Mix well. Now add in the dry ingredients and mix until no lumps. Pour over the broccoli.

Bake for about 55 minutes. Remove and sprinkle the bacon & cheese on top. Return to the oven and bake another 5 minutes or until cheese is all bubbly.

Crescent Roll Apple Turnovers!

♥Crescent Roll Apple Turnovers♥

2 cans Pillsbury Crescent Rolls (8 total) (croissants)
1 Granny Smith apple or other tart baking apple, peeled & chopped
1/3 c brown sugar
2 T flour
1/2 t cinnamon
1/4 t nutmeg
2 T melted unsalted butter
Cinnamon & sugar mixture

Directions

Separate crescent rolls. Combine apples, brown sugar, flour, cinnamon & nutmeg. Evenly divide apple mixture onto 8 rolls. Drizzle melted butter over apples, saving enough to brush on top of rolls. Fold dough over top of apples, pinching up sides as best as possible (there will be openings on sides). Brush with remaining butter and sprinkle with cinnamon and sugar. Bake at 400 degrees for about 12 minutes or until rolls are golden. Serve warm.

Awesome dinner recipe!

Homemade Chicken Parmesan

✰˚ ˛★* 。 ღ˛° 。* °♥ ˚ • ★♥ *˚ .ღ 。

2 boneless skinless chicken breasts

salt and pepper to taste
1/2 c extra-virgin olive oil
3 eggs
1/4 c Parmesan cheese
2 c Italian seasoned bread crumbs
8 oz fresh mozzarella, sliced
Your homemade sauce or favorite Mariana sauce
Fresh basil for decorating (optional)

Slice the chicken breasts in half horizontally to make 4 thin cutlets, season with salt and pepper to taste. Place bread crumbs in a shallow bowl.

Add oil to large frying pan and heat over med-high heat.
Beat eggs and Parmesan cheese together in another shallow bowl. Dredge chicken in bread crumbs tapping off the excess, then dip in the egg mixture then back into bread crumbs coating well.
Carefully lay in the skillet and fry until golden brown and cooked through, about 4 -5 minutes per side depending on the thickness or your chicken.

Transfer to the baking dish and top with sliced mozzarella. Broil until the cheese melts and brown a little about 2-3 minutes. Transfer to serving platter and top with your homemade sauce or favorite Mariana. Decorate with fresh basil, optional.

Sliced Baked Potatoes!

SLICED BAKED POTATOES!!

Ingredients

4-5 potatoes
4 Tbs butter, melted
4-5 green onions, chopped
1 cup grated cheese of your choice
4 strips of cooked bacon

Directions

1. Preheat oven to 400 degrees
2. Slice potatoes about ¼” thick and brush both sides of potato slices with butter; place them on a cookie sheet.
3. Bake in the preheated oven for 30 to 40 minutes or until lightly browned on both sides, turning once.

When potatoes are ready, top with bacon, cheese, green onion; continue baking until the cheese has melted!

Apple Rose Bites!

Apple Rose Bites

These are so easy and cute!

Choose an apple with a nicely coloured skin
Cut apple through horizontally
Slice apple thinly with mandolin into 1/2 circles
Bring to boil 3 cups of water with 1/4 cup of sugar
Drop apple slices into enough water to cover
Simmer 3-4 minutes until soft and pliable
Drop into cold bath to stop cooking.
Make single pie crust recipe or use frozen
( I used the one on the Crisco can) roll out into thin rectangle
Cut into strips approx. 6 inches long and 1-1 1/2 inches wide
Place apple slices across the edge of the dough and roll
set into mini muffin cups
Bake for 15 - 20 minutes at 325 F
Enjoy!

Love Breakfast?

OMG - So simple, yet so yummy!!!! My family LOVES this breakfast bake... One of our favorites!

Breakfast Bake

Ingredients

1/4 cup milk
5 eggs whisked
1 can refrigerated biscuits (I used the Pillsbury flakey kind)
6 green onions sliced
4 to 6 strips of bacon crumbled
1 cup cheddar cheese shredded

Directions

Combine whisked eggs and milk in a large bowl. Cut biscuits into quarters (using scissors) and stir into egg mixture. Let the biscuits soak in the egg mixture while you cook and crumble the bacon, slice the green onions, and shred the cheddar cheese. Add everything into the large bowl. Mix everything up and pour into a greased 9x13 baking dish. Bake at 350 degrees for 25 minutes. (make sure the eggs are no longer runny as each oven varies) Serve warm!

Chicken Bomb!!

Chicken Bombs 

Ingredients:
6 thin sliced Chicken Breast
3 Jalapeno Pepper sliced in half and cleaned
12 slices of Bacon
3oz of softened Cream Cheese
3/4 cup of shredded Colby Jack Cheese
Salt and pepper
1/2 to 3/4 cup of BBQ Sauce of your choice

Season with S&P. Mix the two cheeses together and smear about 1 Tbsp into each pepper half (just use up the cheese between all of the peppers). Place the pepper on the chicken breast and wrap it up as best you can. I suggest placing the pepper cheese side down so it gets completely covered by the chicken.
Wrap each chicken breast completely with two pieces of bacon. Start at one end, wrap half the breast and finish the second half with the other piece of bacon. This helps to keep chicken closed to.
Cook on a preheated 350 degree grill over indirect heat for 30 minutes or until chicken is done. Turn every 5 minutes and baste with BBQ sauce each time you turn it.
For oven: Bake at 375 degrees for 30 minutes or until chicken is done. Baste a couple times and finish under the broiler to set the BBQ sauce. **I suggest a 400 degree oven and no BBQ sauce for the first 20 minutes, turning once to help cook the bacon. Then reduce heat to 375, change pans to loose some of the bacon fat (if you don’t have a broiler pan), cover in BBQ sauce and finish baking!

Healthy popcorn in 5 minutes. Toss the chemicals and try this.

Ingredients
¼ cup dry popcorn kernels
1 and ½ teaspoon coconut oil
2 tsp red palm oil (looks like movie theater butter)
¼ tsp sea salt

Instructions
In a pot, stir together coconut oil and popcorn kernels and heat pot on stove to high. Cover with lid and pop until you hear less popping. When its time, remove from pot into a bowl. Top with melted red palm oil and sea salt.

Happiness

I am very new to this "Blog" thing. This will be my very first attempt at it so please bare with me while its a work in progress and I get the hang of things!

First off I would like to tell you a little about myself, I am a Self-Employed Mother of two wonderful boys and married to my high school sweetheart!

My husband and I have been married 3 years this upcoming April and together for 7. Its amazing how fast time goes! It doesn't even seem that long that we've been together but looking back its been a wonderful ride and I hope to have many more wonderful years with him.

I have two wonderful boys that are complete opposites of each other! My oldest is a very shy, laid back child ( he takes after me) and my youngest is a wild child, he has to be on the go constantly!! Just wait for the stories I have to share!! *He takes after his father*

Last but no least I love being Self-Employed! Recipe of the day!

I love new recipes so with mentioning that I will be posting new ones each day! Be sure to check it out!!

Today is Crushed Red Potatoes

SO awesome! And super simple!

Ingredients (all ingredients are to your desired flavor):
Baby Red Potatoes
Rosemary, Parsley and Thyme, fresh minced
Sea Salt
Cracked Black Pepper
Parmesan Cheese, fresh grated

Variation: Chopped Bacon, Mixed Cheese, Onions, Sour Cream.......

Preheat oven to 425 degrees. Boil the baby potatoes in salted water until fork tender. Cover baking sheet with foil and drizzle olive oil on the baking sheet. Space the potatoes on the lined baking sheet sheet and mash them gently with a fork or potato smasher.

Drizzle the potatoes with olive oil. Season the potatoes with salt and pepper Sprinkle the herbs, garlic and cheese over the top of each potato generously. 

Bake for 15-20 minutes.

So wonderful and easy!!
